Pumpkin Beer Quesadillas

 

 

What you need:

 

Tools

  • Skillet
  • Knife
  • Paper towels
  • Cheese Grater

 

Ingredients

  • 4 Tbsp Olive Oil
  • 1 Medium thin sliced onion.
  • ½ cup Pumpkin Beer
  • 1 tsp 100% maple syrup
  • 4 slices thick cut bacon
  • 4 small chopped Brussels Sprouts
  • 2 cups queso quesadilla Cheese.

 

Directions.

 

Pumpkin Beer Glazed Onions

Thinly slice onion. Heat up 2 Tbsp olive oil in skillet (seasoned cast iron for best results) Saute onions in oil for 8 minutes or until brown and soft (high heat).  Add ½ cup of pumpkin beer and cook 4-5 minutes, until liquid is gone.  Pull and set aside to cool.

 

Bacon/Brussesls

Cut bacon into small pieces and cook in the same skillet as onions. Cook bacon until crispy. Pull bacon, set on paper towel to soak some of the grease and cool, leaving the bacon grease.  Add chopped Brussels, sauté 4-5 minutes until brown in remaining bacon grease. Add maple syrup cook for 1 minute.

 

Assembly

Put glazed onions, bacon, and Brussels to tortilla shell and cover in cheese. Fold tortilla and cook medium heat in skillet with some olive oil. Cook each side 1-2 minutes until slightly brown and cheese melted. Enjoy!
