Sweet potato candied bacon taco

 

What you Need:

 

Tools

-parchment paper

-2 baking sheets

-Aluminum Foil

-Cookie Rack

-Skillet or frying pan

-Oven

-Cheese Grader

-Knife

 

Ingredients

- 1 lb thick cut bacon.

- ½ cup brown sugar

- ½  sweet potato grated

- 4 tbsp butter

- Salt & pepper

- 1 cup mini marshmallows

- Mixed greens

- Soft Tortilla shells

- Pecans

 

Candied bacon

Pre-heat oven to 350. Cover baking sheet with aluminum foil.

Coat each piece of thick cut bacon in the Brown sugar and place on cookie rack over baking sheet.  Bake for 25-30 minutes.  Allow to cool.

 

Sweet potato hash browns

Melt butter in skillet or frying pan.  Grate Sweet potato with cheese grater. Mix salt and pepper in the grated sweet potato. 

Fry in butter until golden brown and crispy.

 

Broil toasted Marshmallows

Turn oven to broil.

Place parchment paper on baking sheet.  Spread Marshmallows out evenly spaced on parchment paper.

Broil for 2-3 minutes checking often. Until lightly toasted.

Remove from oven and allow to cool for 5-10 minutes.

 

Assembly.

On a soft shell tortilla place one piece of thick cut candied bacon. Add Sweet potato hash browns, then cover with mixed greens. Add a small amount of Pecans. Garnish with a 3-4 of toasted Mini Marshmallows. Enjoy!

 

 

Top with

Broil toasted mini Marshmallows.
